Method
Heat the oven to 200C.
1. In a heavy based frying pan heat the oil. Brown the lamb racks on all sides. Transfer to the oven and cook to your preference. (8-10 minutes for medium rare). Once cooked remove and leave covered to rest for 5 minutes.
2. While the lamb is cooking prepare the caramel. In a small high sided pot, heat the sugar and water over a medium high heat until it turns golden brown. Lower the heat and add the spices and chilli followed by the fish and soy sauce, cook for a further 5 minutes.
3. Saute the greens with the beansprouts. Serve the lamb with the rice, greens and chilli caramel, sprinkle on the chopped coriander.
